Pancakes… breakfasts’ favourite treat. Waking up to a hot plate of these fluffy sweets, piled high and oozing with syrup is enough to get anyone out of bed and racing to the kitchen.
A delicious start to the day, and oh so easy to make from scratch. With just seven simple ingredients, you’ll have a fresh batch of healthy vegan pancakes in no time at all.
Ingredients
1 ¼ cup whole wheat flour
1 ¼ cup water
2 tbsp pure maple syrup
1 tbsp melted coconut oil
2 tsp baking powder
½ tsp cinnamon
a pinch of sea salt
Instructions
In a large bowl, combine the flour, baking powder, cinnamon and sea salt.
Melt the coconut oil, and add it along with the water and maple syrup to the large bowl of dry ingredients.
With a whisk or spoon, stir all ingredients well.
Place a frying pan on the stove top and set to medium heat. Add a teaspoon or so of coconut oil to the pan so your pancakes will not stick. As the heat burns up the oil, add more when needed.
When the pan is hot, pour the wet mixture into a measuring cup so it is easier to make the pancakes, then pour small dollops of batter into the frying pan (make sure they spread round and relatively thin, so they cook fast and all the way through).
As the pancake cooks it will bubble and grow darker. Flip with a spatula when the top is golden brown and the edges have cooked. Cook on the opposite side for about 1-2 minutes, then plate.
When your pancakes are finished, enjoy with maple syrup, fresh fruit, and/or chocolate. Bon Appetite!
